Our family’s decision many decades ago to dedicate our land to olives was not merely accidental. It was a deliberate, ethical and aesthetic choice – the choice to safeguard the landscape, its nature and its future.
The olive grove Montalbano extends to over 25 hectares in the district of Carrubelle & Chiari, an oasis of natural beauty and stunning fragrance.
Our extra virgin olive oil is nurtured in Sicily, a wonderful island of culture and tradition, it is an intense oil stepped in history and love for this land. It is light green with yellow highlights and has an intense flavour with touches of almond, pine nut and both unripe and ripe fruits.
The insights and implicit knowledge on how to produce this genuine olive oil is kept in our family owned company and passed down from generation to generation. The oil is a truly authentic extra virgin olive oil, in line with our culinary philosophy of simplicity and harmony.
We wait to the end of October and beginning of November, for the ripeness of the olives – for the right moment – our olives are lovingly picked by hand.
After the harvest, the olives are immediately taken to the mill, where they are cold pressed. To get a particular oil of such excellent quality, we use Biancholille, Nocellara del Belice e Cerasuola olives, varieties that are part of the local tradition.

All stages of work are carried out in minute detail. The harvest is stringently carried out by hand so that the delicate fruit is not damaged before being pressed.
The strong point of the mill is, the extraction machine which allows it to adapt the technicalities of extraction to the variety and grade of maturity of the olives, making it always possible to obtain oils of intense fruit and balance. The olives arrive into the mill the same day of being harvested. All the work operations are performed with scrupulous attention for the stringent cold extraction.
After the extraction, the oil is left unfiltered and bottled. So we ensure that the Extra Virgin oil is maintaining the oil’s chemical and organoleptic values .
Extra virgin olive oil is not only an excellent and tasty natural flavour enhancer, but it is a food which is truly good for your health. This precious food, thanks to its high content of oleic acid and antioxidants (vitamin E), protects the heart and arteries, slows cerebral ageing, prevents arteriosclerosis and used in the kitchen instead of animal fats (butter, margarine, etc) reduces cholesterol levels in the blood.
Extra virgin olive oil, used either cooked or raw, is easily digested because its percentage of acid fats are very similar to that of breast milk, a perfect food which ever way you look at it.
